Onion confit, also incorrectly called onion jam, is a specialty in both Italy and France. It consists mainly of thin chopped slices of red onion caramelized in brown cane sugar. There are countless variations. We refine our onion confit by hand with extra virgin olive oil and wild lavender honey, and cook it down slowly with Aceto Balsamico di Modena IGP.
It is often served cold and goes perfectly with all meat and fish dishes. But especially with game and poultry - especially duck and goose - and all kinds of pies such as foie gras, as well as various appetizers and cold platters. But cheese fans also swear by onion confit, whether hard cheese or mild goat cheese together with a fresh and crusty baguette. In France, onion confit is the classic accompaniment to anything on the menu at New Year's Eve celebrations. Or you can take an onion confit with fondue or raclette as a complement to various sauces.
