Cumin has a long tradition and was used at least 3.000-4.000 years ago, as evidenced by finds of kitchen remains in modern-day Syria and Egypt. The Romans valued it as a spice and as a remedy. In the Middle Ages it was mainly used as a remedy.
Due to its high content of essential oils, cumin oil is often produced, which has a light yellow and very liquid consistency and a very intense fragrance.
Cumin, also known as Roman cumin, comes from the umbellifer family and grows to a height of up to 50 cm.
In the cuisines of the Maghreb, Arabia, Persia, Greece and Turkey, cumin plays a major role in grilled dishes as well as sausages such as sucuk and pastirna.
Conjure up oriental dishes with cumin such as Lebanese potatoes, rice with peppers, chicken breast with eggplants or leg of lamb with chard. But desserts also get an extraordinary aroma, such as Indian cumin cookies or a tart with pears.
