The fine dill tips have a mildly spicy, slightly sweet aroma with a hint of aniseed. The tender, fresh or dried leaf tips are mainly used in the kitchen. They lend dishes a fresh, slightly lemony note and go perfectly with fish dishes, salads or pickled vegetables.
Dill is one of the oldest known spices and medicinal plants. It was already used as a remedy in ancient Egypt, particularly for stomach complaints. The Romans and Greeks also valued dill - they used it both to season their food and to calm insomniacs. In medieval monastic medicine, dill was considered to aid digestion and was often administered as a tea. In popular belief, dill was a protective herb that was supposed to protect the house and farm from evil spirits. Today, dill is particularly popular in Eastern European, Scandinavian and German cuisine - for example in cucumber salads, fish soups or in combination with potatoes and cream sauces.
Dill belongs to the umbellifer family and forms delicate, feathery leaves and yellow flower umbels. The plant can grow up to one meter high. It thrives best in sunny, sheltered locations with nutrient-rich soil.
In the kitchen, dill tips are mainly used - fresh or dried. They are ideal for salads, herb quark, cucumber dishes or for refining sauces. Dill also goes very well with fish, especially salmon. Classic dishes such as “gravad salmon” or “cucumber salad with cream” can hardly do without dill. In Sweden, it is an indispensable ingredient in traditional fish dishes, while in Russia and Poland, whole sprigs of dill are often used to pickle cucumbers. Together with mustard seeds, it is a MUST for pickling gherkins or mixed pickles.
Dill sprigs are also very versatile in vegetarian cuisine. They refine creamy soups, potato dishes, vegetable stir-fries or egg dishes. Dill goes particularly well with yoghurt, cream or cream cheese and is therefore a popular ingredient in dips and spreads. Try an asparagus salad with dill tips.
