Originally from Indian Ayurvedic cuisine, garam masala is now appreciated all over the world. Literally translated, it means “hot spice” and is used in Ayurvedic medicine to heat the body in order to remove harmful substances.
The composition of garam masala varies from region to region. In the south of India in particular, more hot chilies are added than in the north of India, where the food is rather mild. Garam masala consists of a variety of spices and is only added very sparingly in order to maintain a basic flavor in the dish.
