Pimento, also known as Jamaica pepper, comes from the Caribbean and is mainly used in sausage making and for Christmas cookies.
However, allspice has also recently become a popular ingredient in other dishes.
The unripe fruits, which contain essential oils, have a rich flavor of several other spices such as pepper, cinnamon, nutmeg and cloves. This is why pimenta is also known as the four-spice or all-spice.
The fruits are harvested from the Pimenta Dioica, an evergreen tree 10-12 meters high. The essential oils are similar to cloves, but slightly hotter. Allspice is very popular in the Caribbean, the main growing area is Jamaica.
