Sage is a shrub from the labiate genus, of which there are over 900 species worldwide. Due to its high content of essential oils, it was not only used in medieval medicine, sage was also used in Chinese medicine. Sage also quickly found its way into the kitchen as a spice and the dried leaves were brewed with water as a medicinal tea.
Cooking tip: Garnish a piece of veal escalope with sage leaves before frying and conjure up a delicious Saltimbocca alla Romana.
