The “Café de Paris” blend was originally invented in Geneva in the French brasserie of the same name in the 1930s. Legend has it that the spice blend was developed by a French chef for a particularly delicate sauce to accompany a steak - a creation that quickly became popular and can now be found in many restaurants and households around the world. Today, “Café de Paris” is particularly popular in French and international cuisine and is often used as a central element in the preparation of fine, aromatic sauces.
Café de Paris still exists today with two restaurants in Geneva and branches in Spain, France, Saudi Arabia, the United Arab Emirates and Qatar. The only hot dish served is steak or entrecôte with the famous Café de Paris butter sauce, French fries and salad.
The mixture consists of a variety of dried herbs and spices, which together create an intense flavor. Tarragon provides a slightly tart, aromatic freshness, while paprika and curry add a pleasant spiciness and depth. Mustard and garlic give the mixture an additional spiciness that tickles the tongue without overpowering it. Thyme and onion round things off and contribute to a balanced, hearty complexity.
