Tarragon is a perennial herbaceous semi-shrub from the daisy family. It reaches heights of 60-120 cm and its fragrance is reminiscent of aniseed. Tarragon is mainly found in Eastern Europe, Asia and North America, but is now even cultivated in the Arab world. It is harvested several times a year, especially the leaves from the first harvest of the year contain the most essential oils and are therefore highly prized for their intense flavor.
Rubbed tarragon is an important ingredient in many herb mixtures and is therefore perfect as a base for your own herb mixtures or for sauces such as Béarnaise sauce. However, dried tarragon also cuts a fine figure in a Mediterranean salad.
Kitchen tip: Simply add a pinch of dried tarragon to your roast potatoes and fish dishes.
